Day 19 - Oreo Truffles

I made these a few years back for a Christmas party at Turbo's work. Everyone loved them, and they were dubbed Ky-lobites by my wonderful husband and his office buds. I still have no idea why they were named after me and some fossils, but considering how easy and delicious they are I have no problem making a batch when they ask.

Oreo Truffles

1 package Oreo cookies, crushed
1 8 oz. pack of cream cheese, softened
1 package of semi-sweet chocolate, melted
1 package of white chocolate, melted
sprinkles for decorating

Mix 3 cups of the cookie crumbs and cream cheese until well blended. Shape into 1-inch balls.

Dip each ball into chocolate and place on a cookie sheet lined with wax paper. Quickly garnish with sprinkles or cookie crumbs. Refrigerate at least 1 hour to let chocolate set.

Store in refrigerator.

Sorry once again I lost your email, obviously I am not with it this year :)

So I am totally disorganized and Christmas has snuck up on me. But I wanted to tell you about the Hay family Christmas. We finally got everyone to agree to a move from Christmas Eve and decided to host it at my house Sunday December 20th at 3:00. I am just sending out paper invites (I know last minute I am sorry) I don't know how long it will take to get yours, and I wanted to email you in addition to the paper invite since it is so delayed. All the Eiferts are invited and we would love to see you guys, let me know if you can make it so I can have enough food!

Hi guys!

Sorry this took so long. I'm WAY disorganized right now! Trying to do too much with a craft fair tomorrow, Christmas, this brilliant idea to post everyday (which I am obviously SO behind on) and a crazy toddler. I wonder sometimes how I ever thought I could pull it all off?

Anyhoo…

Becca: I use almond bark or Wilton candy melts. They seem to melt better, and the kids like to do the colored chips for the different holidays. I’ve got a few ideas brewing that I think your girls will love. Hopefully I’ll be caught up early next week!

Chelsey: I’ll let you know sometime next week about Christmas. I’m having a small cookie swap the same day, so we just need to see if we can get over to you too.
